High Protein Vegan Breakfast: Savory Tofu Scramble

It’s hard to get in enough protein when you prefer plant-based or if you are vegan. Having different ideas on how to obtain enough protein is very important as our hormone levels decrease.

This is a very easy and flavorful recipe that you can whip up the night before to ensure a quick go-to. This makes 2 servings.

Ingredients:

  • 1 tablespoon olive oil

  • 16-ounce block firm or extra firm tofu

  • 2 tbsp nutritional yeast

  • 1/4 tsp turmeric

  • 1/4 tsp garlic powder

  • 2 tbsp non-dairy milk, unsweetened and unflavored

  • Sea salt to taste

Directions:

  1. Cut tofu in half vertically for two half blocks. Press out the liquid with a towel or paper towels.

  2. Heat the olive oil in a pan. Crumble it into the pan with your hands. Stir frequently for 3-4 minutes until slightly golden.

  3. Add nutritional yeast, turmeric, garlic powder and sea salt.

  4. Slowly add non-dairy milk. Cook and stir constantly until mixed well and liquid reduce.

  5. Serve with sliced avocado, hot sauce, parsley, steamed kale, toast or any other breakfast item of choice
